From the point of view you describe it is equally hard to do in person: you have to watch the interviewer and keep it conversational while talking and thinking.

I have also used to show my structure on camera, but some people don't think this is a good idea, so I guess it is more of a personal preference than a general advice.

Agree - it's a bit harder to connect with the interviewer and see their hints online compared to an in-person setting.
However, there are also many benefits of doing it from home and the experience is a bit more relaxed.
Apart from all the standard tips (theory), you need to practice online cases and presentations before the real interview.
